Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Zest and juice of 1 lime
- Salt and pepper to taste
- 2 poblano peppers
- 1/2 cup Greek yogurt
- 1/4 cup fresh cilantro leaves
- 1 clove garlic
- 1 tablespoon lime juice
- Salt to taste
- Skewers for grilling
Instructions:
Warm the grill up to a medium-high level
Put chopped cilantro, cumin, paprika, lime zest, lime juice, salt, and pepper in a bowl
Add the minced garlic and mix well
Toss the shrimp in the sauce to coat them
Allow to sit for 15 to 20 minutes
Roast the poblano peppers on the grill until they are charred all over while the shrimp is on the grill
Cover them with plastic wrap and put them in a bowl
Let them steam for 10 minutes
Take off the peppers' skins, take out the seeds, and chop them up
Roasted poblano peppers, Greek yogurt, cilantro leaves, garlic, lime juice, and salt should all be put in a blender
To make the poblano sauce, blend everything together until it's smooth
Skewer shrimp that has been marinated
Cook the shrimp on the grill for two to three minutes on each side, or until the shrimp are pink and opaque
Put shrimp skewers on a grill and put roasted poblano sauce on the side for people to dip them in
