Ingredients:
- 2 cups cherry tomatoes, halved
- 1 can 15 oz white beans, drained and rinsed
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled optional
Instructions:
Chop the red onion, basil, and cherry tomatoes into small pieces and put them in a large salad bowl
To make the dressing, mix the minced garlic, extra-virgin olive oil, and balsamic vinegar in a small bowl with a whisk
Spread the salad ingredients out on a plate
Add the dressing and gently toss to coat everything
Add salt and pepper to the salad as needed
If you need to, change the seasoning
You can top the salad with crumbled feta cheese if you want to
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
