Red Beet Salad



With its bright color and delicious flavors, this red beet salad is a great addition to any keto-friendly meal. A tasty and healthy dish is made by mixing roasted beets with red onion, parsley, and a sour dressing.

Ingredients:

  • 4 medium red beets, roasted, peeled, and diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese optional
  • 2 tablespoons chopped walnuts optional

Instructions:

Diced roasted red beets, chopped red onion, and chopped parsley should all be put in a large bowl

Mix the apple cider vinegar and olive oil in a small bowl with a whisk

Add pepper and salt to taste

Add the dressing to the beet mix and toss to coat everything well

You can add the crumbled feta cheese and chopped walnuts to the salad before serving if you want to

You can serve the red beet salad right away or put it in the fridge to eat later
