Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- Gel food coloring various colors
- 1 batch of your favorite frosting
- Rainbow sprinkles
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a cupcake tin
Mix the flour, baking powder, baking soda, and salt in a bowl with a whisk
Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy
One egg at a time, making sure to mix well after each addition
Add the vanilla extract and mix well
Slowly add the dry ingredients to the wet ones, mixing in the buttermilk every so often
Don't mix any further than that
You can use one bowl for each color of cupcake batter
In each bowl, add gel food coloring and mix until the color you want is reached
Using spoons, put small amounts of each color of batter into the cupcake liners to make a rainbow
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
On a wire rack, let the cupcakes cool all the way down
Use your favorite frosting to cover the cupcakes once they are cool, then sprinkle rainbow candy on top
